This is one of my favorite desserts and probably the easiest to make. It reminds me of summer and vacation and its freshness is matched only by its lightness.
Long live the strawberries of the Island of Orleans!
450g (1 lb) ripe fresh strawberries
250 ml (1 cup) sugar
1 egg white
Cut strawberries into slices or quarters and place in a large bowl. Add the sugar and egg white and mix on high with a mixer until everything is frothy.
Divide the preparation into cocktail cups and refrigerate until dessert time.
